Ingredients:

For the Cheesy Asparagus:

  • 1 lb fresh asparagus, trimmed
  • 2 tablespoons olive oil
  • 1/4 teaspoon garlic powder
  • 1/2 cup shredded mozzarella or Parmesan cheese
  • Salt and pepper to taste

For the Garlic Herb Potatoes:

  • 1 lb baby potatoes, halved
  • 2 tablespoons unsalted butter
  • 2 cloves garlic, minced
  • 1 tablespoon fresh parsley, chopped

Directions:

  1. Prepare the Potatoes:
  • Preheat oven to 400°F (200°C
  • Toss potatoes with melted butter, garlic, salt, and pepper.
  • Roast for 20-25 minutes or until golden and crispy.
  • Cook the Spiced Salmon:
  • Pat salmon dry and brush with olive oil.
  • Rub smoked paprika, garlic powder, cumin, cayenne (if using), salt, and pepper evenly over fillets.
  • Cook in a skillet over medium-high heat for 4-5 minutes per side or until cooked through.

  • Arrange asparagus on a baking sheet and drizzle with olive oil.
  • Sprinkle with garlic powder, salt, and pepper.
  • Roast in the oven for 10-12 minutes or until tender.
