Indulge in this mouth-watering surf-and-turf combination, featuring tender steak, succulent Cajun shrimp, and a loaded baked potato.
Ingredients:
For the Steak:
- 2 ribeye or sirloin steaks (about 8 oz each)
- 1 tablespoon olive oil
- 1 teaspoon Cajun seasoning
- 1 teaspoon garlic powder
- Salt and pepper to taste
For the Cajun Shrimp:
- 1/2 lb large shrimp, peeled and deveined
- 1 tablespoon butter
- 1 teaspoon Cajun seasoning
- 1/2 teaspoon smoked paprika
- 1 clove garlic, minced
- Juice of 1/2 lemon
For the Loaded Baked Potato:
- 2 large russet potatoes
- 1/2 cup sour cream
- 1/2 cup shredded cheddar cheese
- 1/4 cup cooked and crumbled bacon
- 2 tablespoons green onions, chopped
- 2 tablespoons butter
- Salt and pepper to taste
Directions:
- Prepare the Baked Potatoes:
- Preheat oven to 425°F (220°C).
- Scrub potatoes, pierce with a fork, and rub with olive oil, salt, and pepper.
- Bake for 45-60 minutes or until tender.
- Cook the Steak:
- Rub steaks with olive oil, Cajun seasoning, garlic powder, salt, and pepper.
- Heat a cast-iron skillet over medium-high heat.
- Sear steaks for 3-4 minutes per side for medium-rare.
- Cook the Cajun Shrimp:
- Melt butter in the same skillet over medium heat.
- Add shrimp and sprinkle with Cajun seasoning, smoked paprika, and minced garlic.
- Sauté for 2-3 minutes per side until shrimp turn pink.
- Prepare the Loaded Potatoes:
- Slice each baked potato open lengthwise and fluff insides with a fork.
- Add butter, sour cream, shredded cheddar, crumbled bacon, and chopped green onions.
- Assemble the Dish:
- Plate the steak alongside the loaded baked potato.
- Top the steak with the Cajun shrimp and drizzle with buttery juices.
- Serve:
- Garnish with additional green onions or parsley if desired.
