Ingredients (serves 8):
- 2 cups cherry tomatoes
 - 2 medium English cucumbers
 - 2 ripe Hass avocados
 - 1/4 red onion
 - 1/4 cup fresh cilantro
 - 2 tablespoons freshly squeezed lemon juice
 - 2 tablespoons extra virgin olive oil
 - Salt and pepper to taste
 
Instructions:
- Cut the cucumber, tomato, avocado, and red onion into bite-sized pieces.
 - Place all the vegetables in a mixing bowl and add the cilantro.
 - Drizzle with olive oil and lemon juice, then toss to combine.
