A refreshing and nutritious salad ready in 15 minutes!

Combine the crunch of cucumber, juicy tomato, and tender avocado, topped with a simple lemon-olive oil vinaigrette.

Ingredients (serves 8):

  • 2 cups cherry tomatoes
  • 2 medium English cucumbers
  • 2 ripe Hass avocados
  • 1/4 red onion
  • 1/4 cup fresh cilantro
  • 2 tablespoons freshly squeezed lemon juice
  • 2 tablespoons extra virgin olive oil
  • Salt and pepper to taste

Instructions:

  1. Cut the cucumber, tomato, avocado, and red onion into bite-sized pieces.
  2. Place all the vegetables in a mixing bowl and add the cilantro.
  3. Drizzle with olive oil and lemon juice, then toss to combine.
  4. Season with salt and pepper.
  5. Serve immediately!
