Ingredients:

  • 1 cup (200g) pitted and chopped dates
  • 1 cup warm water
  • 1/2 cup vegetable oil (coconut or olive oil)
  • 1 cup flour (whole wheat or gluten-free)
  • 1/2 cup brown sugar (optional)
  • 1/2 cup chopped nuts (walnuts, almonds, or pistachios)
  • 1 teaspoon baking powder
  • 1/2 teaspoon ground cinnamon (optional)
  • 1/4 teaspoon salt

Instructions:

  1. Soak the dates in warm water for 10 minutes until they become soft.
  2. Blend the soaked dates with their water in a blender until you get a smooth paste.
  3. In a large bowl, mix together the flour, baking powder, cinnamon, salt, and brown sugar (if using).
  4. Add the date paste and vegetable oil to the dry mixture and mix well until combined.
  5. Fold in the chopped nuts.
  6. Pour the batter into a greased cake pan or a parchment-lined pan.
  7. Bake in a preheated oven at 180°C (350°F) for 25-30 minutes or until the cake is golden brown and cooked through.
