
Crispy Chicken Sandwich with Melted Cheese
A Perfectly Crunchy and Cheesy Delight
Ingredients:
- 2 boneless, skinless chicken breasts
- 1 cup buttermilk
- 1 cup all-purpose flour
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1/2 teaspoon cayenne pepper (optional)
- Salt and pepper to taste
- 1 cup panko breadcrumbs
- 4 slices of cheddar or provolone cheese
- 2 brioche buns
- 2 tablespoons butter, softened
- 1/4 cup mayonnaise
- 1 tablespoon Dijon mustard
- Lettuce, tomato slices, and pickles for topping
- Neutral oil for frying
Directions:
- Prepare the Chicken:
- Slice each chicken breast in half horizontally to create four thin fillets.
- Place the chicken in a bowl with buttermilk, cover, and refrigerate for at least 30 minutes or overnight for extra tenderness.
- Coat the Chicken:
- In a shallow dish, mix flour, garlic powder, paprika, cayenne pepper, salt, and pepper.
- Place panko breadcrumbs in another dish. Remove chicken from buttermilk, letting excess drip off, and dredge each piece in the flour mixture. Dip back into the buttermilk, then coat with panko breadcrumbs.
- Fry the Chicken:
- Heat oil in a large skillet to 350°F (175°C). Fry the chicken in batches for 3-4 minutes per side until golden brown and cooked through. Drain on paper towels.
- Melt the Cheese:
- Place a slice of cheese on top of each chicken fillet. Cover with a lid or tent with foil for 1-2 minutes to melt the cheese.
- Toast the Buns:
- Spread butter on the cut sides of the brioche buns. Toast in a skillet until golden and crispy.
