Chawal Muthia: A Delicious and Healthy Gujarati Snack

Ingredients:

  • 1 cup cooked rice
  • 1/4 cup chopped coriander
  • 1-2 green chilies, finely chopped
  • 1-inch piece of ginger, grated
  • 1/2 teaspoon crushed ajwain
  • 1 teaspoon coriander-cumin powder
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon Asafoetida powder
  • Salt, to taste
  • 1/4 cup curd
  • 1 tablespoon lemon juice
  • 1 tablespoon oil
  • 1 cup wheat flour
  • 1/2 cup gram flour
  • 1 tablespoon semolina (optional)
  • Water, as needed
  • Mustard seeds, sesame seeds, and Kashmiri red chili powder for tempering

Instructions:

  1. Mix cooked rice with chopped coriander, green chilies, ginger, ajwain, coriander-cumin powder, turmeric powder, Asafoetida powder, and salt.
  2. Add curd, lemon juice, and oil to the mixture.
  3. Mix in wheat flour, gram flour, and semolina (if using).
  4. Add water and mix well.
  5. Divide the mixture into 3 parts and shape each part into a cylindrical roll.
  6. Steam the rolls for 20 minutes.
  7. Cut the rolls into pieces and temper with mustard seeds, sesame seeds, and Kashmiri red chili powder.
