Aloha Flavor: Hawaiian-Style Chicken Skewers with Pineapple and Ginger

Indulge in the tropical flavors of Hawaii with our delicious chicken skewers, marinated in a sweet and savory mixture of pineapple juice, soy sauce, and ginger.

Ingredients:

  • 500g chicken breast or thighs (free-range or organic)
  • 1/2 cup fresh pineapple juice
  • 1/4 cup soy sauce
  • 2 tablespoons honey
  • 1 tablespoon freshly grated ginger
  • 1 tablespoon coconut oil
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon salt
  • 10-12 wooden skewers
  • Pineapple, bell peppers, onions, and cherry tomatoes for garnish

Instructions:

  1. Prepare the marinade by mixing pineapple juice, soy sauce, honey, ginger, coconut oil, pepper, and salt in a bowl.
  2. Cut the chicken into bite-sized pieces and add them to the marinade. Let it marinate for at least 30 minutes or overnight in the refrigerator.
  3. Preheat the grill or barbecue to medium heat.
  4. Thread the chicken pieces onto the wooden skewers, alternating with pieces of pineapple, bell peppers, onions, and cherry tomatoes.
  5. Cook the skewers for 10-12 minutes, turning regularly, until the chicken is cooked and slightly charred.
  6. Serve the skewers hot, accompanied by a side of rice or green salad.
