Ingredients:
- 500g chicken breast or thighs (free-range or organic)
 - 1/2 cup fresh pineapple juice
 - 1/4 cup soy sauce
 - 2 tablespoons honey
 - 1 tablespoon freshly grated ginger
 - 1 tablespoon coconut oil
 - 1/2 teaspoon black pepper
 - 1/4 teaspoon salt
 - 10-12 wooden skewers
 - Pineapple, bell peppers, onions, and cherry tomatoes for garnish
 
Instructions:
- Prepare the marinade by mixing pineapple juice, soy sauce, honey, ginger, coconut oil, pepper, and salt in a bowl.
 - Cut the chicken into bite-sized pieces and add them to the marinade. Let it marinate for at least 30 minutes or overnight in the refrigerator.
 - Preheat the grill or barbecue to medium heat.
 - Thread the chicken pieces onto the wooden skewers, alternating with pieces of pineapple, bell peppers, onions, and cherry tomatoes.
 - Cook the skewers for 10-12 minutes, turning regularly, until the chicken is cooked and slightly charred.
